Fruit Salad with custurd


Items Required:
Milk : 1 litre
Sugar : 1 1/4 cup
Custurd powder : 2 spoons
Apple : 1
Banana : 1
Dry fruits : 1/2 cup
Grapes
Method:
1. Boil the milk till the boiling point.
2. Mix the custurd powder with cold milk and mix this to the boiling milk.
3. Stir it continously so that no lumps will occur.
4. Finally add sugar and allow it to cool.
5. Refridge it for 2 to 3 hrs.
6. once it is cool, add the friuts and finally garnish with dry fruits.


Chitraannam


Items Required:

Cooked Rice : 1 cup
Sundried mirchi(challa mirapakaya) : 4 -5
Cashews : 6-7
Lemon : 2 spoons

Grind:
Coconut :1 cup
Ginger : 1 inch
Green mirchi : 3
turmeric : pinch
Salt : pinch

Method:
1. Grind the above 5 items lightly
2. Take a pan and put 1 spoon oil and 1 spoon ghee and fry the sundried
mirchi and cashews and keep aside.
3. In the same pan fry the above grinded paste for 2 mins
4. Spread the cooked rice in a large boil and mix the above paste.
5. Finally add lemon and salt according to taste.

Majjiga pulusu

Ingrediants:


Ginger : Small piece

Garlic : 2 pods

Jeera : 1/2 spoon

Green chillies : 2 or 3

Bhel Poori

Items Required

Puffed rice 4 cups
Sev 2 cups
Onion 1 no finely chopped
Tomato 2 nos finely chopped
Potatoes 2 nos boiled,peeled & cubedsalt,
chilli pwd acc to taste
Green chutney
sweet chutney
For Green chutney:
Cilantro 1/2 bunchgreen
chillies 6 no
salt & lemon juice.
Blend all the above to a fine paste & reserve.
Sweet/sour chutney:
Tamarind extract 1 cup
Pitted Dates 1/2 cup
sugar 1 Tbsp.
Cumin Powder 2 tsp.
Chilli Powder 2 Tsp.
Salt Acc to taste
Boil the above till they reduce by half & cool.Grind it to smooth consistency.
For Bhel poori:
Mix all the ingredients & serve in an individual plates immediately.

Pav Bhaji


Items Required
Potatoes : 3 cups, diced small
Cauliflower : 2 cups, finely chopped
Frozen Green Peas : 1 cup
Carrots : ½ cup, diced small
Salt : 1 tsp (to taste)
Turmeric : ¼ tsp
Water : 2 cups
Oil : 1 Tbsp
Butter : 1 Tbsp
Jeera : ½ tsp
Hing (Asofoetida) : pinch
Red Chili Powder : ¼ tsp (to taste)
Onion : 1 medium, finely chopped
Garlic : 2 tsp, minced
Ginger : 2 tsp, minced
Tomato : 1 medium, chopped
Tomato Sauce : ½ cup
Pav Bhaji Masala : 2 tsp (to taste)
Dhania Powder : 1 tsp
Lemon Juice : ½ tsp (to taste)
Coriander leaves : 1 bunch(for garnishing)

Method:

In a pressure cooker, add Potatoes, Cauliflower, Green Peas, Carrots, Salt, Haldi and Water – Mix well.

Pressure cook for 1 whistle and remove pressure after 2 minutes
Heat Oil and Butter in a non-stick pan.

Add Jeera and allow it to sputter.

Add Hing and Red Chili Powder.

Add Onions, Garlic and Ginger – stir well.

Cook until Oil starts to separate.

Add Tomatoes and Tomato Sauce and mix well.

Cook until Oil starts to separate again.

Add Pav Bhaji Masala and Dhania Powder – mix well and cook for 1 minute.

Add Vegetables and lightly mash.

Add Lemon Juice and adjust Salt/Chili Powder/Pav Bhaji Masala.

Cook for 5 minutes.

Garnish with Coriander leaves.
